Nutritional scientist at the Kwame Nkrumah University of Science and Technology (KNUST) is calling for the inclusion of fruits and vegetables in government’s developmental initiatives.
Dr. Charles Apprey observes most of the initiatives have focused on staples which have been implicated in obesity.
According to him, making the commodity all year round has become crucial in the fight against Covid-19.
He says the over-consumption of carbohydrates and fats at the expense of fruits and vegetables results in hidden hunger
“There’s nothing wrong with rice but when you eat rice without fruits and vegetables, you’re full there’s a deficiency of micronutrients which will boost your immune system to fight Covid-19.”
He wants the government to have a policy for fruits and vegetables and build a centralized system to store the perishable commodities.
The nutritionist believes it will make fruits and vegetables cheaper.
“For post covid we should ensure proper way to store the fruits and vegetables are cart and stored. Kenya, Tanzania, South Africa are doing it.
“When fruits and vegetables become readily available, people will buy at cheaper cost,” he said.
