In a single egg yolk you can get more than 1400 IU of vitamin A, 85 IU of vitamin E, 300 micrograms of retinol, 80 micrograms of beta-carotene and 100 micrograms of lutein. Dietary Options
Egg yolks can be consumed in a wide variety of ways, and are a very versatile food that can be added to many recipes. Scramble or fry egg yolks along with the egg whites for a nutrient-rich simple meal. Add egg yolks into baked recipes to create richer and denser baked goods. Whip egg yolk together with oil and anchovies to create a homemade Caesar salad dressing.
Considerations
Raw eggs occasionally contain salmonella bacteria, which is harmful to health and can even cause severe food poisoning and death. Consult your medical or holistic doctor before eating large quantities of egg yolks, as some health conditions can worsen as a result, such as in people with high cholesterol.
